PB CHOCOLATE CHIP COOKIES
Ingredients:
- 1/3 cup coconut flour
- 1/3 cup brown sugar
- 1/4 cup coconut oil melted
- 1 TSP vanilla
- 2 flax eggs or 2 regular eggs
- 1/2 TSP baking soda
- 1/2 TSP salt
- 1/3 cup peanut butter creamy
- 1/3 cup chocolate chips of choice
Instructions:
- Preheat oven to 350F
- Combine all wet ingredients then dry ingredients
- Then dump dry ingredients into wet and mix
- Add chocolate chips at the end
- Scoop mini spoonfuls of dough and place on a greased baking sheet
- Bake 12 – 15 minutes until golden brown on bottom and outside
- Let cool 10 minutes
- AND enjoy every damn BITE

Finished with soy sauce, scallions, and a squeeze of fresh LIME this was my absolute favorite summertime comfort combo.. still going at it and thankful it’s perfect for breakfast, lunch, or dinner.
