BUTTERNUT SQUASH SOUP
Butternut Squash Soup

It's finally the fall season and SOUP SZN!! There is nothing I crave more as the weather gets colder, than homemade vegetable soups. This one is a MUST as it is delicious and will give you all the fall flavors you have been craving!
Ingredients
- 2 tablespoons olive oil
- 2 medium yellow onions chopped
- 2 large butternut squash about 5 pounds total, peeled and diced into chunks
- 4 medium apples - cored, chopped
- 4 cups low sodium chicken stock or vegetable stock
- 1 1/4 tsp kosher salt
- 1/2 teaspoon freshly grated nutmeg
- pinch of black pepper
- pinch of cayenne pepper
Instructions
- In a large pot saute your onion in olive oil until translucent about 8 minutes
- Add in your squash and apples and spices let cook about 2 minutes
- Pour in your broth and bring soup to boil, then bring to simmer and let cook 30 minutes.
- Blend soup and season with salt / pepper, top with yogurt and pumpkin seeds!
