HALLOUMI SAAG PANEER
we’ve been cleaning and organizing all day and looking forward to spending Friday night as it would usually be spent together on the couch 💗We love spending friday nights spent eating a delicious comforting meal to end the week. Here we have this comforting delicious saag paneer, that will satisfy every comforting flavor.
Ingredients:
- 4 tablespoons olive oil
- 12 halloumi cheese cut into cubes
- 1 large bag chopped spinach
- 1 white onion finely chopped
- 1 TBS peeled and minced ginger
- 4 cloves garlic, minced
- 1 serrano chile, finely chopped
- 1/2 tsp garam masala
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne
- 1/2 cup plain yogurt, stirred until smooth
Instructions:
- Whisk together the turmeric, cayenne, 1 teaspoon salt and 3 tablespoons oil. drop in the cubes of halloumi and toss. Let the cubes marinate.
- Steam up and cook spinach then chop very finely or blend in food processor.
- Get pan nice and hot with oil and grill cheese until crisp on both side, set aside.
- Add more oil to pan along with the onions, ginger, garlic and chile and sauté slowly for about 15 minutes.
- Add the garam masala, coriander and cumin. Add a little water to prevent from burning and cook for about 3 more minutes.
- Add the spinach and stir well, incorporating the spiced onion mixture into the spinach. Add a little salt and 1/2 cup of water, stir, and cook about 5 minutes.
- Turn the heat off. Add the yogurt, slowly. Once the yogurt is well mixed into the spinach, add the cheese. Turn the heat back on, cover and cook until everything is warmed through, about 5 minutes. Serve and enjoy your WEEKEND!
