There is nothing better than a warm cozy cup of chili on a brisk fall day. Make this and prepare to get cozy on the couch for the evening white you sip every bite. Or plan to eat at the table with ALL the toppings to suffice.
Ingredients
- 1 Tbsp olive oil
- 2 cups chopped yellow onion
- 6 cloves garlic, chopped
- 1 pound ground turkey or beef
- 1 28-oz can diced tomatoes with jalepenos or peppers
- 3 TBS tomato paste
- 1 14-oz. can pumpkin puree
- 1 cup chicken broth or vegetable broth
- 2 ½ tsp. driedthyme or oregano
- 2 Tbsp. chili powder
- 1tsp ground cinnamon
- 2 tsp. ground cumin
- `1tsp pumpkin spice
- sea salt
- black pepper
Instructions
- In a large pot saute your onions and peppers - cook for about 8 - 10 minutes until translucent and then throw in your garlic and cook about 2 more minutes
- Add meat of choice - ground beef or turkey or a bunch of veggies! Let the meat really brown at the bottom of pan and the start to break up meat with wooden spoon.
- Add in your tomato paste and spices, let it cook and darken 1-2 minutes
- Add in your diced tomatoes, pumpkin puree and chicken broth. Bring to boil, following bring to a simmer and let cook at simmer at least 40 minutes.
- Season with salt and pepper and top with ALL the toppings! Enjoy!
