SHAK-SHUKA alla GNOCCHI
ok where to begin ? brunch? middle eastern? sauce? bread? eggs? cheesy? warm deliciousness? what’s not to love about this incredible creation! Shakshuka is a classic middle eastern dish I had discovered on my travels through Israel. It’s made with a few simple, healthy ingredients and usually made vegetarian. I had experimented with shakshuka a few times in my own kitchen, but then I went to Israel… and WOW! Did you know they serve this dish as a classic entree at almost every restaurant for breakfast, lunch or dinner, literally any time of day, it’s most likely on the menu, but just as you would search for THE best pizza in New York City, you will have to find THE spot for the best shakshuka in Israel. Anyway, after trying many different types abroad, I came home with my own Italian collaboration on it and let me tell you, it’s pretty damn good!
Ingredients:
- 1 packet of frozen or refrigerated gnocchi or better yet, make some homemade
- 1 jar of garlicky tomato sauce or again better if made from scratch
- 4-6 cage-free pastured organic eggs
- 1-2 sprigs of basil for garnish
- mozzarella cheese for garnish
- baguette optional
Instructions:
- cook gnocchi according to instructions
- find yourself a large skillet + bring to medium heat, then add your tomato sauce
- once sauce is simmering about 3-5 minutes, add cooked gnocchi
- following with a spoon make little holes in the pan for the eggs, crack eggs into heated sauce
- bring heat to low and cover the pan for about 5-8 minutes until eggs are cooked to your liking
- remove from heat and garnish with fresh basil or herbs of your choice , throw in some mozzarella and it will begin to melt over the gnocchi + serve immediately with bread to DIP into sauce.
