Who doesn’t love roasted chicken? or even just the smell of it. the smell for me is really what does it, such a memory from my grandma’s kitchen growing up. this chicken is so simple and satisfying with a tons of sweet juices all made in ONE pan! to do it right, roasted chicken takes a long time and a lot of preparation – here is what I do when my client’s ask for roasted chicken, it’s nearly just as good and brings the same aroma!

Instructions:

  1. To start preheat your oven to 425º in the meantime wash and pat dry your chicken with paper towels, next rub your chicken with a pinch of salt and pepper – all over.
  2. Following without heating the pan, just pour the canola oil into the pan, then lay the chicken down in the pan (skin-side down). once all the chicken is set in the pan, turn your stove top on to medium heat. that’s right you put the chicken into the cold pan of oil and then turn the heat on – I promise it’s THE trick to that crispy roasted chicken skin. Let the chicken skin get super golden + crispy, about 11 minutes. then remove the chicken from the pan, place on a plate with paper towel ( skin side up)
  3. In the mean time while your chicken is getting crispy in the pan, start to prep your vegetables. cut the LEEKS, chopped, white parts only. dice up the shallots. cut the ends off your lemon and slice it into 1” slices. take your tomato + cut into think slices, set aside.
  4. Once your chicken is resting on paper towel plate, begin to sauté your fennel, shallots and lemon in the same pan the chicken was in. the chicken fat from the pan will add lots of flavor to your veggies! add a pinch of salt and pepper to veggies and remove from heat – about 4 minutes.
  5. Next take your tomato slices top them onto your sautéed veggies, then place the chicken thighs on top of the tomatoes and place the pan with chicken and veggies, into your heated oven! bake for 15 – 20 minutes depending on your oven. take chicken thighs out and let rest for 5 minutes before eating, enjoy!
