PISTACHIO LAMB RICE
Ingredients:
- ghee or butter
- 1 1/2 pound of ground lamb
- ½ tsp kosher salt
- ½ tsp freshly ground black pepper
- 1 cup uncooked basmati rice
- 2 cups chicken broth
- ¼ cup raw pistachio nuts chopped
- 1 tbsp finely chopped fresh mint leaves
- 1 cup plain Greek yogurt
- 1 garlic clove
- 1 Tbsp lemon juice
Instructions:
- he ghee / butter in a large pan pan. Once melted add the ground lamb to the pan and break it up into pieces with a wooden spoon, until it becomes nicely browned and crispy, mix around as needed, about 8 to 10 minutes until cooked through.
- Add uncooked rice to the pan and stir until it turns translucent, then pour in the chicken stock and bring to a simmer. Stir, cover and let cook over low heat until the liquid is completely absorbed and the rice is fully cooked, about 20 minutes. Once rice is cooked, remove from heat, let rest
- Gradually add in the chopped pistachios and fresh mint. Spread yogurt at the bottom of serving plate and then spoon the lamb rice over the yogurt. Garnish with more chopped fresh mint, pistachios and serve with fresh cucumber slices or greek salad if desired!
